Easy Vegan Apple Pie With Homemade Pie Filling

I love apple pie anytime! Especially topped with some vegan vanilla ice cream or whipped topping. With Thanksgiving coming up, I thought for today's post I would share with you my recipe for vegan apple pie.


To make things easier, I like to purchase already made pie crust. Many brands are vegan, you just need to check the ingredients. Instead of brushing the crust with egg wash, a mixture of vegan butter and maple syrup is used.


Easy Vegan Apple Pie With Homemade Pie Filling


1 package of vegan store bought pie crusts containing 2 pie crusts.

8 apples

1 tsp of apple pie spice

1 tsp of cinnamon 

1 tsp of vanilla extract juice of one lemon

3 tbsp of maple syrup

2 tbsp vegan butter


1. Wash, peel, and slice apples.

2. In a bowl, combine the apple slices with the apple pie spice, cinnamon, vanilla, lemon juice, and 2 tbsp of maple syrup.


3. Put 1 tbsp of vegan butter in a pot. After the butter melts, add the seasoned apple slices and cook for about 15 minutes or until soft.


4. While the apples are cooking, preheat the oven to 375 degrees. Put one pie crust on a baking sheet lined with foil and set aside. Take the other pie crust and place between two sheets of wax paper and roll over with a rolling pin, until rolled out smooth and to a size that can cover the top of the pie.

 

5. Place cooked apples in the pie crust that is on the baking sheet. Place the flattened crust on top and crimp the edges. Poke air holes on top.  Optional: Take leftover crust, flatten with the rolling pin, and cut out shapes with cookie cutters to place on top. 

6. Mix 1 tbsp of vegan butter with 1 tbsp maple syrup in a bowl. Spread on top of the crust until the top is evenly coated. Dab off any access with a paper towel.


7. Bake the pie for 20 minutes. After 20 minutes, turn the pie around to bake for another 15 minutes.


8. Let the pie sit for at least an hour. You can serve after 1 hour of cooling or put in the fridge to chill. Serve with vegan whipped cream or vegan vanilla ice cream.
