I have a cookbook collecting addiction. It all started when I was a kid. I would love looking through my mom's and grandmother's cookbooks. As an adult I started my own collection. My cookbook collecting went to a whole other level when I was exploring veganism and then eventually becoming vegan.


Vegan cookbooks inspired me on my vegan journey. There is this misconception that vegan food is boring and just salads. This is far from the truth!


Here are some cookbook reviews I posted earlier this year on my YouTube Channel.




My latest addition to my cookbook collection is "PlantYou: Quickies" by Carleigh Bodrug. This is the third PlantYou cookbook. I received my copy last week and so far it doesn't disappoint! What I love about her books (I have the other two) is that the recipes each have a photo as well as each ingredient has a photo. The recipes are relatively simple and teach other how to make incredible food with plants.



This book has recipes designed for busy people. I pretty much want to try to make everything in here. The photos are a feast for the eyes! So far I made her "Carrot Cake Baked Oatmeal" recipe located on page 74 & 75 in the book. You can also get the recipe from here website here.



The only thing I did differently was add a tsp of vanilla extract to the frosting. I want to experiment with this recipe an add pineapple and coconut extract. I was very enjoyable. The book also has "Brownie Banana Baked Oatmeal" and "Chocolate Peanut Butter Baked Oatmeal" that look fabulous!


I will let you know what other recipes I try from here. I highly recommend checking out the PlantYou cookbooks and website. There is definitely something for everyone.

Jennifer, what a delicious-looking recipe, and thanks for sharing it! I love to read recipes. Before I was married, I read myself to sleep perusing cookbooks. My husband didn't know I could cook, so what a great surprise for him!

I added vanilla to the icing as well, it needed it! The next recipe I'm going to try from Quickies is the southwest sweet potato bake. I'm going to make some black beans for that recipe in the instant pot today. I can relate! I LOVE cookbooks! My favorite cookbook author of all time is Isa Chandra Moskowitz and one of my favorite cookbooks is The Peaceful Kitchen from Catherine Perez, which you have featured in the first video above. I make a smoothie from that book every morning and I've tried almost every recipe in the cookbook at least once.

We live in the South of Germany and the traditional food here is very meat heavy. But luckily there's a guy on Insta who veganises those recipes. I love cooking them for my husband to take to work and apparently his colleagues are always jealous 'cause they are stuck with the canteen food 😄...
