Meal Prep Magic

It has been a busy week! Yesterday I didn't post for the blog challenge. I probably could have found something quick to throw on my blog, but I just didn't have it in me. This makes the 3rd time this month not posting. It's okay though, here I am now and I am going to challenge myself to be consistent through the end of this month's challenge.

One of the coolest things happened to me this year! I launched That Vegan Morning Show with my amazing friend Kimberly Winters who is also the host of The Did You Bring The Hummus Podcast. We go live every Monday morning at 7am Eastern on YouTube. Over the past seven months since we launched, we now have quite an extensive library of replays up. You can check them out here.

Having such a busy week has inspired me to share this pre-recorded episode we did about meal prep. In this episode Kimberly shares her best batch cooking tips to help you save time, eat well, and make plant-based living easier than ever. I do a cookbook review of PlantYou" By Carleigh Bodrug and make her Pumpkin Breakfast Cookies and

Crunchy Peanut Shredded Salad. The recipes are under the video in the notes section.

If you are looking for some inspiration for quick, easy, healthy meals, then this episode is for you! What tips do you have for eating healthy during a busy week. Let me know in the comments.

Jennifer Shlomovich is a recovering people-pleaser turned confidence coach. As the only vegan in her household, she knows firsthand how challenging it can be to stay true to your values when the people around you aren’t on the same path. For years, she put everyone else’s needs ahead of her own, but through her journey, she discovered the power of setting boundaries, living by her values, and confidently prioritizing her well-being. Now, she helps busy women simplify plant-based living so they can improve their health, save time, and feel supported—even if their family isn’t on board. On her YouTube channel, The Confident Vegan, she shares inspiring interviews, practical tips, and empowering conversations about what it really means to live in alignment with your values. She is also the co-host of That Vegan Morning Show with Kimberly Winters of the Did You Bring The Hummus podcast—where they help you start your day the vegan way, live every Monday at 7 AM ET on YouTube.

I have tried to meal prep with little success. But am willing to keep trying!! I think it’s a matter of having the right storage containers for my fridge.

It has been a struggle for me too. That is why we did this video simplifying the strategy for the week.

I love food, but I'm not organized enough to do all of that meal prep at the beginning of the week. Maybe, if I had someone other than just me to cook for, it would make a difference. But with just me, I don't really know.
