Cooking with The Confident Vegan has been a fun series I created last year on my YouTube channel. It's where I chat with guests while we cook something. There is always some type of theme.


In this video Dr. Marina De León, Ph.D. joined me in the kitchen. We had a fun time baking delicious cookies and muffins with a mineral-boosting twist using blackstrap molasses and maple syrup. The recipes are available in the notes below the video.


Dr. Marina De León is a nutritionist specializing in microbiome health. She earned a nutrition consulting certification from Bauman College in Berkeley California, and a PhD in Microbiology from the University of California, Davis. You can learn more about her work here.
