Easy Oatmeal Cookies (Vegan, Gluten-Free, Oil-Free)

I love cookies! Since I discovered whole-food plant-based eating, I discovered you can eat cookies that are also healthy. Here is a recipe I shared on my YouTube channel.
Easy Oatmeal Cookies (Vegan, Gluten-Free, Oil-Free)
2 ripe bananas
1 tsp vanilla
1 tsp cinnamon
1 tbsp maple syrup
1 1/2 cups of oats (Use GF certified if needed)
1/2 tsp baking powder
1/2 cup of raisins or vegan chocolate chips
Line a baking sheet with parchment paper and preheat the oven to 375F.
Mash the two bananas with a fork in a mixing bowl.
Add the vanilla, cinnamon, maple syrup, and mix until all the ingredients are combined.
Add the oats, baking powder, and raisins or chocolate chips and mix until all the ingredients are combined. Form the mixture into 8 balls, place on the baking sheet and flatten.
Bake for 12 minutes.
Store in the fridge for up to 3 days. These are great for a healthy snack or grab-&-go breakfast option. Enjoy! What other types of recipes would you like me to share? Let me know in the comments.

I'm going to have to try this recipe. Love that it doesn't have lots of ingredients and includes items I already have.
